  • 1 Celeriac, peeled and chopped
  • 100g Pesto
  • 2 tbsp. Grain Mustard
  • 75g Grated Parmesan
  • Olive Oil
  • Sea Salt
  • 50g Roasted Pine Nuts

Method

Try this celeriac dish it wins everytime, the flavours really go well together.

METHOD

  1. Place the diced celeriac in a bowl, mix in the pesto and mustard then season with a little salt
  2. Place the celeriac into a pouch and seal
  3. Cook in a preheated water bath at 85 degrees for 45 mins or until tender
  4. Serve immediately with a sprinkle of pine nuts and parmesan

Chefs Tip-

Why not add a roasted garlic butter to the pouch for that rounded roast flavour
